Our Cakes

At Cakes Galore only the finest quality ingredients go into our creations: unsalted butter, premium flours, farm-fresh eggs and Callebaut chocolate! Delicious even without frosting, Cakes Galore butter cakes and sponges are simply delightful!

Creamy, rich, lightly sweetened mousseline buttercreams range from vanilla and Callebaut chocolate to a wide assortment of fruit and liqueur-based fillings. Never too sweet, only buttery and flavorful, our buttercreams and ganaches garner many compliments from happy clients!


Getting to know the details about a guest of honor, to develop a design that will surprise and delight their guests, all work toward a Cakes Galore creation with the perfect dessert in mind!
With the details sketched and approved by the client, Amanda begins her baking with the choice of tender, moist buttercake.  As the delicious scents waft from the oven, mousseline buttercreams and Callebaut chocolate ganaches are carefully made to the specifications of the dessert.  Later, the filled cakes are sculpted, shaped and slathered with still more buttercream or perhaps covered with colorful fondants for imaginative accents.  Careful, creative work goes into each cake to finally present the 'wow' factor for the client!   Smiling faces, laughter and sometimes tears of joy, mark the entrance of a Cakes Galore cake!


Tender-crisp handmade fondants, chocolate ribbons and buttercream exteriors, finish each and every Cakes Galore creation to complete perfection! Artistic sculpting and coloring provide a world of possibility for each cake and each individual client's wishes.

Meet Amanda Lynn

Amanda Lynn Lecky is the new owner and cake designer at Cakes Galore. She was born and raised on Vancouver Island.  At 16 she created a very special Pac- Man cake that ignited a lifelong passion for edible art. Amanda had the honor to work with one of the top cake designers in Vancouver whilst she attended the International Culinary Schools at the Art Institute of Vancouver. After she graduated from the baking and pastry program, Amanda went on to work at the Hyatt Regency Hotel before moving back to Victoria. Now she's living her lifelong dream by providing beautiful one of a kind cakes to Vancouver Island!
